Ruffle Cake - Bakeology.co.nz - A lifestyle blog that shares a love of baking and all things pretty

I was delighted to be invited to celebrate and to create a 1st birthday cake for my friend’s twin girls.

It was fairly quickly decided that chocolate was the cake flavour of choice.  This was paired with a simple vanilla buttercream that was tinted pink.

I’m pretty lucky that my friends and family give me free rein when it comes to decorating so I felt this was the perfect opportunity to attempt a new technique – ruffles.  I’m not going to lie, I hated my first attempt. The layering of the  ruffles looked fine but the width of them was a little too wide so I scraped them all off and started again.  The second (and final!) attempt was by no means perfect but I was really happy with how the cake looked in the end.

    Doing the icing this way, does it mean there is a lot more icing than normal / more sweet?

      Thanks! I really like this cake and want to make it again.

      Yes, you’d use more icing than if you were just doing a simple iced cake but the amount is probably comparable to doing a cake covered in rosettes (more icing but not so much that you’d want to vomit). The cake recipe I used is not super sweet and balances the extra icing used too.

      This cake was three layers high so it was huge (and heavy)!
