As some of you might already know from my previous post, I’m a self-confessed vanilla addict. I’m also a huge Lewis Road Creamery fan (Roadies unite!) and decided to exclusively use their products to create Lewis Road Creamery Vanilla Bean Ice Cream. Absolutely the best decision! The result was smooth velvety ice cream, you’ll find it hard to resist eating the whole container in one sitting!

If you follow me on Instagram you might have seen that I bought myself a KitchenAid stand mixer for Christmas (best present ever!).  I’ve wanted one for years and I finally had the opportunity to make my dreams come true.  When I bought my mixer, as a bonus gift, I received an ice cream bowl for free!  I’ve only used it once so far to make this delicious Lewis Road Creamery Vanilla Bean Ice Cream but I have plans to create more icy treats.

Ingredients

  • 2 cups Lewis Road Creamery organic single cream
  • 1 cup Lewis Road Creamery organic homogenised milk (dark blue lid)
  • ¾ cup caster sugar
  • pinch of sea salt
  • ground vanilla beans (you can find vanilla bean grinders in most supermarkets)
  • ½ teaspoon vanilla extract

Directions

  1. Pour 1 cup cream into a medium saucepan and add sugar and salt.  Warm over medium heat, stirring, until the sugar is dissolved.
  2. Remove from the heat and add the remaining 1 cup of cream, milk and vanilla extract.
  3. Chill the mixture throughly in the fridge, ideally for 8 hours.
  4. Follow the instructions that came with your ice-cream maker.
  5. Either eat straight away or put into an airtight container and pop into the freezer for 2-4 hours to firm up.
