You want more cheese? You got it!
Here is my recipe for Bacon & Cheese croquettes, who made an appearance at the now legendary cheese party. (I think there may have to be a Cheese Party II in the future!). They are so easy to make and super tasty.
To make things even easier you can prepare your croquettes the night before and refrigerate until you plan on cooking them or if you have left over mashed potato from last nights dinner in the fridge, whip up a batch of croquettes to have for dinner tonight. If you have kids, get them involved in the process, it’s lots of fun.

Ingredients
- 600 grams potatoes, peeled and chopped
- 30 grams butter
- ¼ cup milk
- ½ cup bacon, chopped
- 1 egg yolk
- ¼ cup plain flour
- ¾ cup cubed tasty cheese
- ½ cup plain flour
- 1 egg
- 1½ cups breadcrumbs
- Olive oil (for frying)
Directions
- Place potato in a large saucepan. Cover with cold water. Bring to the boil over high heat. Cook for 8 to 10 minutes or until tender. Drain. Return to pan over low heat. Toss for 1 minute or until excess liquid has evaporated. Remove from heat. Add milk and butter. Using a potato masher, mash until smooth. Season.
- Heat a medium non-stick frying pan over medium heat. Add bacon. Cook for 3 to 4 minutes or until crisp. Transfer to a plate lined with paper towel to drain.
- Place mashed potato, bacon, egg yolk and 1/4 cup flour in a bowl. Mix to combine. Shape heaped tablespoons of mixture into 20 balls. Push a cube of cheese into centre of each ball, shape mixture around cheese to enclose.
- Place remaining ½ cup of flour on a large plate. Place breadcrumbs on another large plate. Whisk egg in a shallow bowl. Roll croquettes in flour, shaking off excess. Dip in egg mixture. Coat in breadcrumbs.
- Pour enough oil into a medium, deep frying pan to come 5mm up side of pan. Heat over medium-high heat. Cook croquettes, in batches, turning for 3 to 4 minutes or until golden. Using a slotted spoon, transfer to a plate lined with paper towel. Serve croquettes with sauce of your choosing.
