Afghans are a huge favourite that I don’t get to indulge in very often, this could possibly be because I bake so many other yummy items. Try out this Afghans recipe and you’ll never buy store bought ones again, they are that good! This recipe is great to do with kids because it super easy to make and it doesn’t matter how ugly they might look, they are still extremely delicious.
I’ve swapped out the traditional chocolate icing for some decadent dark chocolate from Whittakers and added silky smooth dutch processed cocoa from West Coast Cocoa Merchants to the biscuit. So not only do they smell amazingly chocolatey but they taste heavenly too.
Ingredients
- 200g butter, softened
- ½ cup sugar
- 1 ¼ cups plain flour
- ¼ cup West Coast Cocoa Merchants Baking Cocoa
- 2 cups cornflakes
Directions
- Preheat oven to 180°C.
- Cream butter and sugar until light and fluffy. Sift flour and cocoa. Stir into creamed mixture.
- Fold in cornflakes.
- Spoon mounds of mixture onto a greased or lined oven tray, gently pressing together.
- Bake at 180°C for 15 minutes.
- Leave to cool.
Topping Ingredients
- 170g Whittakers 50% Cocoa Dark Block
- walnut halves (optional)
Topping Directions
- Chop chocolate into small pieces. Microwave on half-heat until melted.
- Slather afghans with melted chocolate and decorate with a walnut half, if wished.
- Once chocolate has set, store in an air tight container.
